Turned on heat in bathroom for a day or so. 70 F - 72 F for 10 days.
Racked on April 3rd, day 11 to carboy as per instructions. 11.4% at the moment. I can't see it going down much further. Almost got it up to the neck of the carboy, but it was getting kind of plugged up from the lees and oak chips so I quit there.
Racked to carboy and added everything I was supposed to. Next day I will add the clearing agent. Tossed it downstairs on the bench. Filter and bottle around April 21 - 22. Hope to get the filter working properly. Too much foam coming out. Must be air in the hose thing.
BOTTLED ON APRIL 23
I ended up with small dust like particles in each bottle. Not sure what it is since I filtered. The only thing I can say is I didn't have any RO water and used well water when I soaked the filters in water which was boiled and cooled. There was some calcium on the bottom of the pot and I may of picked up some on the filters. If this is true, it should of stayed in the filters and not gone through to the wine. Tastes good though, way better than my previous wine. I did use 1/2 of the sweeter this time and it made a big difference.
