Brew Day - February 28, 2010
3 Dog Cavan Springs Ale
This is a variation of my usual pub ale. I retired that one and went on to this one. This has to be a really good beer to brew it again since I have to get the vienna malt online. I am sick of ordering stuff online and paying the huge postal rates.
15 Gallons
22 lbs. Canada Malting 2-row
2.0 lbs. Vienna Malt
90 grams Hallertauer pellet hops ( 4.5 AA ) - 60 minutes
24 grams Hallertauer pellet hops ( 4.5 AA ) - 20 minutes
35 grams Notttingham
O.G. - 1.050
F.G. - 1.008
% - 5.53
srm - 4.6
BU - 26.6
I read the pdf file on Nottingham. They said that aeration is not necessary with this yeast. If you repitch it, ( I don't ) then you need to aerate. I have always aerated my beers with Nottingham. So, I did what they said. I was of course hesitant to do this. The fermentation got up to 71F at one time, so I had to turn the fridge on. It pretty well finished fermenting in 4-5 days. Hmm, a stuck fermentation? I let it go to around day 8 and took a sample. Quite yeasty, but it was down to around 10 - 12. Okay, that is fine. I went to some beer forums and did a search. Yes, a lot of brewers asked and are doing the same thing. No aeration with Nottingham. Great!!! No more buying those expensive red oxy cylingers. One last step also. I plugged up my old aeration stone with using it for years. I think it was the aeration process, just using my well water to run hot water through it to clean it. Apparantly, my well water with all its nutrients, etc. plugged it up. I have two others for future use if I use yeast other than Notty. This beer also tasted pretty good. With all that yeast, I tasted the Vienna malt. I have never used it before and it tasted nice and bready/toasty. Very slight though, not over powering. I think I am going to buy a sack of this stuff if this turns out to my liking. This beer so far has turned out pretty good. It is not a strong tasting beer at all. Maybe when I buy a sack I can throw in a little bit more if it helps. I will know more in a couple of weeks. With the low final gravity, ( actually too low ) I guess aeration is not needed as Danstar said. Good to know. Okay beer. Not really to my liking though. I guess I just like IPAS too much to switch.
