Sous Vide A Sirloin Tip Roast/Sear On The BBQ - Saturday, February 15, 2025

This Sirloin Tip Roast was bought at Independent Grocery Store.

I want to cut this into steaks when done. I have to get the little bbq very hot if I can.
Char it on both sides while keeping the inside a good pink colour. We don't want a red colour so I am doing this at a temperature of 134F for 24 hours. Cut into minimum 1 1/2 inches wide and sear on the bbq until a good char is on both sides.

Ingredients
3 lb. Sirloin Tip Roast
Kosher Salt - ( coat well on all sides)

Set temp at 134F. Cook for 24 hours. Pre-heat Mr. Robobrew on 4:00 pm. Add the roast
at 5:00 pm. Every time I check it the temp is 132F. I hope that isn't too low to NOT get in the
"red" zone.

It was good. Quite tender. I didn't get a char from the bbq like I saw on you tube. Next
time, slice them thicker because they shrunk a bit. Maybe cook them around 127F. Even
though that is in the "red" zone, when you char it on the bbq it seems to look like medium.
Not a lot of pink. I would say, if you sear it on the stove, yes, cook it at 134F. If you manage
to get your bbq hot, ( in the summer for sure ), then cook it at 127F. All in all, the Kerr's
said it was an excellent steak and I agree. Mine was not thick enough. You can always buy
the other roasts at Farmboy. They are cheap and big. I saw all the cheaper tough cuts.

SLICE THEM THICKER NEXT TIME - 2".
