113 g Citra dry hop in keg - ( May use more )

The last of my Citra hops. I hope they don't fade. The last one seems to be hanging around a little longer than the previous one before that. Load em up with hops!!!

                                                                     BREW DAY


An uneventful brew day. Actually cooled it too cold and had to turn on the wall heater for an hour or so to get to pitching temp. I just tossed in the dry yeast with no hydration. I was worried that the gravity was too high ( 1.050 ) to work with no hydration. I think 28 g is still higher than even 2 sachets of US-05. 

Today - Tossed in US-05 around 2 pm. It was crazy carrying the spent grains down to the far part of my lot to toss it over the fence. I did it, anything for beer.

Going good the next morning. 67 F. I will have to turn on the heat sometime soon as the outside temps are around the freezing mark during the day and colder at night.

Almost done or close to being done. Keg next week sometime and add remaining dry hops. The last of my Citra hops. Today is day 15 and maybe I can get around to kegging this. Actually Friday, March 24 is a good day to do that. Dry hopping in the keg when I keg it too. 

                                                                 FRIDAY, MARCH 24

Dry hopping today for 3 days. Will add gelatin on Monday, March 27. Transfer when clear. Since we are going to Dorchester, this will be 8 days under gelatin. It will be clear.

Sampled today because I am bored and have a painful right foot so can't do a dam thing. I realize it will not be real clear yet but do it anyway. I get the orange smell right off the top. I prefer grapefruit/pine but this is what Citra gives. Glad I am out of it. Cascade for now on. Slightly cloying but it is early. A bit of haze still in it, but only 3 days with gelatin. Not a lot of bitterness. Should of went to 40. Other than that, it does have the classic west coast taste. I may brew this in June when I am not busy with guests or going somewhere.


Checking for clear beer today, April 4. Transfer to another keg and punch it up.

I added around 8 1/2 ounces of hops and you can hardly taste them. 8 ozs. at 0 and dry hop. Not much bang for my buck. If I ever brew an ipa again, it will be all cryo hops. I need a good neutral hop like Warrior at 60 min. to give it a good bitterness up front. Other than that, no odd or funny taste yet. Good and clear too.
