House Dust IPA - Wednesday, February 8, 2023
This is basically the same recipe as the last one. Down to finishing off the 7 lbs. of hops I bought from the GTA Brews on Sept. 2020. They are 2019 hops though. After this batch you have enough hops for another batch and that is it. You will have around 75 g of Citra hop. After this batch you will have 33 lbs. of 2 row left.

28 g US-05 ( Rehydrated )
10.70 g Citra - FWH
13 g Citra at 20 min.
11 g Citra at 5 min.
55 g Citra at 0 min.
Add all of the remaining hops in the little jar to a santized muslum bag and add to the keg. There is 134 g.

Next Day - Going good. Forgot to turn on the wall heater, but only got down to 64 F. On now.
Day 2 - Same.
Day 3 - Same.
Day 4 - Slowed down. Have to remember to check door and wall heater. 64 F.
Feb. 18 - Done. Will keg in a few days and when cooled, add gelatin and a hop bag. Need fishing line to let it hang half way down the keg. The taste from when I kegged it was fine. The first one that didn't taste funny, that odd after taste which I have had in all of my current IPA's. I wish I knew what is causing the odd taste, but I really cannot figure it out.
KEGGED ON FEB. 22
Dry hopping for 3 days. That means my 72 hours ends on Saturday morning. Removed hop bag on Sunday morning. Carbing up right away with no gelatin. The aroma from the hops is quite strong when I lifted out the hop bag full of dry hops. Since it was cold, just purged it and cranked up the psi.
Did that at 2 pm on Sunday, Feb. 26.

Just to see how the hop aroma is. Fine. No funny odd flavours my last 2 had. On the other hand, my last 2 were also fine until day 3,4,5, up to a week. Then they went south. The last one never got better, but the first one did clean up but I only had 2 - 3 litres left. I will sample daily and post daily until I can start sampling my bitter. Although, this beer will taste better fresh and not aged for more than a few weeks because then it really starts to lose some hop flavour. No gelatin will help this brew remain a little fresher. It is quite hazy. It seems that with this lower water profile no matter how much hops I use, it still doesn't give me the in your face hop aroma. I kind of knew that, but just gave it a shot anyway. The next one is not high, but it does have a sulphate of 207. My last one. I think I will do a Robobrew in the summer with Cryo hops just because I can. It seems to be fine as of Feb. 28. It may change like the second last one did. That shit changed on a daily basis. Seems fine for the moment. 8 days in the keg and no drastic flavour changes so far. If I brew this sometime later this year I will have to go to the original high sulphate amount that lets the hops shine. Most likely will just brew Kolsch's.
