Costco Chardonnay - Thursday, Jan. 6 and Friday Jan. 7

Having a hard time getting the temp up. Stuck on 68 F. I moved it to the bench and it is now 72 F. Took awhile. Checking it often as the wall heater isn't consistent, like high temp and then takes a long time to come back on. I still have apple cider to make. Been in the fridge for over a month. This is the last of Marty and my wine. I used the yeast that came in his kit for him and I used the yeast I bought at the Vineyard in Vaughn. Mine seemed to of started faster.

Cold outside at the moment: -20 at 6 am, but getting up to -7. No wonder the house is cold.

O.G. - 1.092

R.G. - mine - 1.000 - Re-racked to a carboy to get it off of 3 inches of trub.

Marty's - 1.020 ( letting it sit for 2 more days ) 2 days later - 1.018. 2 more days then check it again.

Didn't check Marty's gravity, just racked it on Jan. 23. Been in there too long. Use better yeast next time you make wine for Marty. Not sure I want to make wine again, leaning towards Apple Cider.

F.G. - Marty's - .994 ( 12.3% )

F.G. - Mine - .994 ( 12.3% )

                                                                  NOTES

Day 2 - Some activity, kind of slow. 70 F.

Day 3 - Lots of activity. Smell is everywhere. 74 F. Turned down wall heater a bit.

Day 4 - 66 F. Wall heater sucks. Too hot or too cold. Turned it up.

Day 5 - 70 F. Leaving it there, no use playing with the wall heater.

Day 6 - Same.

Day 10 - Still going fine. No time to rack today as we are dog walking tomorrow.

The oak chips clogged up the hose again. I forgot to use a muslum bag. Have to re-rack on Jan. 20 as I got 4 inches of trub in the carboy. Checking the gravity on Marty's wine today also. Rack carefully this time stupid.

CHITOSAN IN CHRIS - JAN. 29

CHITOSAN IN MARTY - JAN. 31

10 days later for both or longer. Mine isn't clearing very fast compared to previous batches. Still a lot of trub at the bottom of both carboys. Never, ever make wine in the winter again. Always struggling trying to keep the temp up to 72 F. Finally clearing up. Took awhile and lots of trub on the bottom of both carboys. Never make wine in the winter again, takes a lot to keep the temp up to 72 F in the winter.

I can bottle around Feb. 11, 12 or 13. Working around dog walking and kegging my lager. Marty's wine is clearing well in the carboy, mine? So So. Hope the filter doesn't clog up.

I got some floaties in a few of my bottles in one case and nothing in the other. I googled it and could not find an answer at all. I pumped through 2 gallons of RO water through the filter before filtering the wine, so wtf?

Filtered Mine on Feb. 14

Filtered Marty's on Feb. 15.

Checked for any floaties in Marty's wine the next day. None that I saw. Marty will get it on Feb. 16.-
