This is my last Kolsch for awhile. Brewing lagers for now.








Ingredients

11 lbs. CMC
8 ozs. Wheat
6 ozs. Munich II
69 g Hallertauer at 60 min.

Water Profile - David Heath from You Tube

Do not measure out any brewing salts incase the previous Kolsch isn't any good. I am sure this
water profile is fine, but if you have to tweek it, you will be tossing some salts out. I am not
sure what to do to make it better though as I have been using 75/25 for the last 2 years now.
It did turn out okay and then went south on me. The previous Kolsch seemed to be fine so I am
going with the same water profile for now. Hope to make lots of this next summer.

Mash Water - 5.5 gallons ( 1.85 qts water/lb. of grain. )

Make a 3 L starter and then transfer 1 L to a mason jar to end up with 2 L of starter wort. This starter was made on Wednesday, December 15. Transferred to a mason jar on Dec. 17. Ready now to pitch in this beer when it is made on Dec. 22.

                                                      BREW DAY NOTES

I seemed to of got 2 qts. too much in the mash. Have to be more careful if you want to replicate the recipe batch after batch. Other than than, an uneventful brew day which is okay.

W2LP029 PITCHED AT 1:30 pm.

                                                       FERMENTATION NOTES

Day 1 - Full krausen the next morning. 60 F. Too cold. Turned fridge up a couple of degrees. 
Day 2 - Turned off fridge to warm it up. Forgot to check it at bedtime. 66F next morning.
             Turned it back on, duh!!
Day 5 - 63 F. Slow and steady. Leaving it there until done.
Day 13 - Seems to be done. I have no where to put it though.

No pressure transfer as I don't have enough hoses. Buying a 5/16" syphon and hose for wine soon. 

Tastes the same as the previous Kolsch. Same recipe duh!! At least I can make consistent beer I don't like. 

                                                 TOSSING OUT SOON - NOPE NOT YET

I got some slime rope in my glass which was quite disturbing. Poured it in the sump pump and the rest is drinkable. Not great, just drinkable. Still have no idea this had a funny taste. I did change 2 things.

1. Used Munich II - which should not of done anything.
2. Used a different water profile for the first time. That has to be it, not brewing Kolsch beers for awhile so I will never know because I will never use that water profile again even if I do decide to brew a Kolsch.
