House Dust IPA - Friday, December 17, 2021 ( SMASH )

Mr. Robobrew

Just tossed this together quickly just to make beer and use up my Citra hops in which I bought too much of. I found this water profile on the internet and it seems to be in the range where I am used to. This is why I am not going to brew this style and when the hops are done, I think that will be it. However, if this is good, I will continue to brew it for myself and not worry about what guests want.

This water profile is similar to the last one in October and was tossed out. I still don't know why it sucked.

Ingredients

13 lbs. CMC
14 g Citra @ 60 min.
20 g Citra @ 20 min.
71 g Citra @ 0 min.
56 g Citra dry hop 3 - 5 days before kegging.
US-05 - ( 20 g )

Water Profile ( close to yellow dry )

The water profile is close to my last House Dust which I tossed out. It just sucked. It had an awful after taste which I just couldn't stand any longer. This one doesn't have any Epsom salt in it. I tried to put it in and over shot my numbers, so I left it out and ended up with this profile which was easy to do. Hope it is at least drinkable.

                                                     CALIBRATE MR. ROBOBREW

I have incorporated calibration into every brew day when I use Mr. Robobrew. It seems to be all over the place when I am trying to mash and especially when boiling. Boiling is boiling, but when it says 223 F when boiling, I am wondering where the mash was? Seems to be fine now. The boil stated 216 F.

                                                                  BREW DAY NOTES

Normal brew day so far. Long though, had a hard time getting started - kids... Wort tasted fine, ( but don't they all? ) No strong hop taste, no in your face hop aroma. I had a Mad Tom in Millbrook and it had a perfect balance of hops, malt and bitterness. Not sure I can get ever get that, at least haven't as of yet. I still want to use up all of my Citra hops as the local homebrewers didn't want to pay $20 a lb. for them, they seem to be okay paying any where from $34 to $46 a lb. A bunch of weirdos in my opinion. I couldn't of even give away 100 Brew Your Own magazines, free and no takers. The mash was fine, it didn't raise up and over the malt pipe at all. All you have to do is use enough mash water and throttle the valve if needed. Didn't have to play with it too much on this brew. Repeat this with all brews.

                                                  FERMENTATION NOTES

Day 1 - No activity yet, but that is normal. 68 F.
Day 2 - Full krausen and the activity is still low, but will pick up soon. The reason is it is 64 F.
Day 3 - Going fine, not blowing the socks off, but good. 68 F.
Day 4 - 68 F. Going fine, no heat on and not needed at the moment.

                                                        KEGGED ON DEC. 29

World Juniors game canceled. Doesn't look good for the tournament as a whole. May as well keg this as it hasn't done anything in a few days. I did add some hops 3 - 5 days before kegging but that was more than 5 days ago. Tastes very grapefruit/orange like. Not too hoppy though, kind of just right.

                                    WORLD JUNIORS TOURNAMENT CANCELED

I didn't clear it and it changed for the worse just a few days after kegging. No idea what is going on. My Kolsch sucks too. Switched to lagers for 2022 to get some decent beers for a change. Supplies are not being shipped at all, nothing on Jan. 3.  Finally shipped from OBK on Jan. 4. Still waiting for my lager yeast.

                                                               TASTE UPDATE

Seems to be holding the hop aroma with a sample on Jan. 19. I didn't clear it, but usually by this time I am not getting a lot of hop aroma. The next and final one will have lots more aroma hops. Taste is pretty good now ( Jan. 27 ). Still a bit hazy, but did not add any gelatin.
