Ingredients

11 lbs. GTA Pils Malt

8 ozs. Munich I

8 ozs. Vienna

5 ozs. Acid Malt

77 g Hallertauer Mittelfruh

WLP029 Kolsch

Water - 75% RO - 25% WELL ( 25% well water still seems okay )

I sampled the previous Kolsch which is a duplicate of this recipe and it was real nice, but needs aging of course. I thought my well water would do something bad to the beer, but it hasn't yet.

                                                        BREW DAY 

Nothing BAD happened today which is usually the case in the basement. However, spring is on the way so I can finally brew out in the garage and make all kinds of mess on my back deck which is just a garden hose spray clean up.

Tuesday, March 16 - Good thick head of krausen going on. Clean up to brew on March 29.

Wed March 17 - Krausen going down but still very active bubbling going on.

Used a coarse filter and it is clear. Not bright, not interested in a bright beer. Taste is good, not getting that spicey after taste I am used to. Not a big deal though since I am lucky to get a good tasting beer not using brewing minerals at all, just 2% acid malt. Going with just Munich malt and tossing the Vienna malt. I am getting for the first time the cracker like taste from Vienna malt which I hate. Need to make more of this because of demand.
