Robobrew

I am finally doing a brew with my well water. I am sick of buying beer and I need to know once and for all if I can brew an IPA with my well water. I already know I can't brew a Kolsch with my well water as I need soft water which means buying RO water.

Ingredients

12.75 lbs. CMC
4.5 ozs. Acid Malt
14 g Warrior at 60 min.
28 g Chinook at 30 min.
56 g Chinook at a 175 F Hop Stand for 15 minutes.
15 g US-05
100% well water ( hoping the sulphates and calcium are in sink and proper levels )


My last few IPA beers either taste funny using brewing salts, or my last one using just 50% RO and Well water did not work at all. Very cloying but I used munich II and vienna malts. This is a smash beer almost so if it is cloying, it will be the water or something else I don't know about. No crystal malt or specialty malts at all, so cloy up then you bastard. Well, I tasted my wort sample the next day and it was really cloying. Not sure why, but the taste after fermentation is what really matters. I will put this style on hold for sure until I figure it out. Nothing wrong with my Kolsch beers yet. I keg my 25% well water Kolsch tomorrow and then I will see if I can continue to brew even with a small percentage of well water.

I finally saw some minerals at the bottom of my sparge tank today. 10% or less than I usual got a few years ago. I do think this is because of my water softener just isn't working.

Day 10 - Sampled some and yes, a little cloying but not as cloying as the last one. I will be kegging this
               in a few days and will not add gelatin or filter it. I think it needs some dry hops in the keg 
               which can be done when I purge it before kegging. I am thinking on adding all hops from the
               20 minute mark the same way Mike McDole from the BN did his.

No filtering, no gelatin, just hazy beer until it clears on its own. Well water was used, so you never know how this will turn out. No sample. Will maybe do a 2 L pop bottle when it is cold and carb that up.

TOSSED IT. WAS GOOD FOR A LITTLE BIT, BUT SUCKED AFTER A FEW DAYS.
