4 Dog IPA - Tursday, Feb. 11, 2021 - Conical

Got my grains this week from our bulk buy from Kawartha Homebrew in Lindsay. Hoping to do 2 brews as long as my hops last. Looks like no bulk hop buy this spring. I just paid $20 to GTA Brews for my membership and can't use it, bloody China Virus.
Ingredients
22 lbs. Canada Malting
2.50 lbs. Munich II
2.50 lbs. Vienna
11 ozs. Acid Malt
1.5 ozs. Roast Barley ( for colour adjustment )
50 g US-05
14 g Warrior - 60 min.
30 g Chinook - 60 min.
60 g Chinook - 20 min.
60 g Chinook - 0 min.
100 g Chinook - dry hop 5 - 7 days in the primary before kegging.
Water Profile - 50/50 RO/WELL
10.50 gallons in mash and sparge
5.25 gallons each RO/WELL in mash and sparge tank.
O.G. - 1.056
F.G. - 1.012
% - 5.8
SRM - 6.3
BU - 43.6
FERMENTATION NOTES
Having a bit of a hard time keeping a steady temp with no fridge. Still around 66F to 68F, so I guess that is okay. Shut the door at night and the room go to 54F. Beer was still 66F, so that is fine. Door open during the day. Very cold outside now so the basement is quite cool.
Brew Day - Added yeast around 12 noon.
Feb. 12 - Going good and had to adjust the conical lid to get any bubbles coming from the blow off
hose. There is always something.
Feb. 16 - Added dry hops this morning as it has slowed down a lot since yesterday. Leave it until done.
Feb. 17 - Still active, bubbling about every 5 - 10 seconds or so. Keg around Feb. 25.
Feb. 18 - Slowing down now, every 45 seconds or so. Should be a go to keg next Wed.

Turned the valve wrong and everything got plugged up. Idiot!!! Beer on floor, fridge, wall, etc.
Strong smell of Chinook hops for sure. Taste is not as strong as the smell. I think I need to go with 100% Spring water, or even go 50/50 spring/well.

Bought 8 packs of course filters and will filter the lower filled keg to see how it tastes. I hope to not get any cardboard taste like I did in my last batch of wine last year. I like the taste of hazy IPA's, but most beer has to be clear. That hazy part is just letting brewers off the hook for not filtering their beer. Pass the savings on to us, but that will never happen. I tend to not buy them. It cleared it up fine. Nice head and good but not great hop aroma. I will stop using RO water to bring the sulphates up to where I can get more of a hop taste. I am though, quite happy with this beer. Best IPA so far, no " FUNNY" taste I got every time I made this with brewing salts.
UPDATE
Cloying beer. I will brew another one since I already got the recipe ready to brew. Not sure why this is so cloying? Didn't take long, 24 hrs. Looks like Kolsch is King for now on.
Tea bag/harsh/astrigent beer. Splashing around when I filtered it? Not that bothered by it because I am brewing Kolsch beers for this year. I have to vacuum my specialty malts I bought last week to keep them fresh until I can fix this problem or just make something else.
