Today I am starting to brew my only style this year besides my lager which will be a one off. I will over build my yeast starters and do this for around 4 - 5 batches and buy some new yeast. I still can't find any 092 Kolsch yeast. Not available in any HB store in Ontario. Maybe next month. This is the first time I have had trouble buying supplies, and it is not a covid thing. No excuse for not getting it in stock. I even requested it from the store in Lindsay, but this guy isn't interested in helping out customers.
Ingredients
11 lbs. GTA Pils Malt
12 ozs. Munich 1
8 ozs. White Wheat
4 ozs. Acid Malt
70 g Hallertauer Mittelfruh at 60 min.
30 g Saaz at 10 min.
Escarpment Kolsch - 2 L yeast starter with over build.
75/25 RO/Spring or well ( depending on how my current Kolsch tastes which had 25% well water )
Using well water for my 25%. Seemed to work for my last Kolsch.
O.G. - 1.050
F.G. - 1.010
% - 5.26
SRM - 3.7
BU - 25
Brew Day Notes
Nothing unusual going on. Normal brew day so far. Wort tastes good. Fermenting fridge died today. Going with the keezer and will brew my 4 Dog IPA until spring/summer or when I get another fridge. It has to be the right dimensions and no freezer if possible which may be hard to get.
Jan 19 - Starting to get a good krausen going on.
Jan 20 - Going good now, no surprises. Hope this yeast is a work horse like Imperial Dieter is.
Jan 21 - Same.
Jan. 25 - Seems almost done, but not enough time in primary. I am moving it to my bench and turning
on the heat to get it to finish.

Back to my classic Kolsch beers I used to brew 5 years ago which were never clear, but I fixed that. After gelatin, maybe filtering, this should be my best beer yet. If so, this will be my go to beer.
TASTE AFTER CARBING UP
Too much of a noble hop aroma/late addition of Saaz. Not doing a 10 min addition anymore. 60 min addition and that is it.
