Lockdown Lager - Tuesday, February 2, 2021

 Still in lockdown with stay at home orders. Boring but get it over with now and maybe summer can be normal again and I get to play ball in Squirrel Creek. Using the last of my Vienna malt because I can. Will be getting my 4 bags of Canada Malt soon so I can make home made starters and finally some Cavan Style IPA's.

Ingredients

11lbs. GTA Pils

8 ozs. Vienna

8 ozs. Munich I

4 ozs. Acid Malt

70 g Hallertauer Mittelfruh at 60 min.

30 g Saaz at 10 min.

Wyeast 2308 Munich

O.G. - 1.048

F.G. -

% - 

SRM - 3.6

BU - 25

Did all of this the next morning early. Doing a fast ferment and going to make a starter from my 2 pacs of WLP029. I think I will have to step it up, but I do have time to do this. Need to make some IPA's but have to wait for my local grain buy to get here.

                                                   FERMENTATION NOTES

Feb. 4 - Nothing yet, but soon I think. Temp is lower than 10 C - 9.6 C. I will keep it there until I see

             signs of fermentation and may raise it a degree or so. No need to really as this is a lager and I

             will let it go to do a proper D rest.

Feb. 6 - Looks like I need a D rest as it has slowed down from yesterday. I have to carry it in the 

             back room and turn on the heat. This was early as I didn't intend to do a rest until Feb. 8 or 9.

Feb. 7 - Very active but the ass smell is fading.

Feb 10 - Almost done. I cannot shut the door because I will soon have my conical full of an IPA. I

               will just leave it there and keg on day 13, 14, or somewhere around there. Hope it starts to

               clear quickly.

OKAY BEER. TOO MUCH OF A PILS MALT TASTE IF THAT IS EVEN A THING.
