Maggie Maibock - Friday, September 18, 2020
I just love the colour of this beer. Not sure where mine will be, but I hope it is close. Never brewed this style before as I always thought that it was some sort of black lager. Never assume anything.
Ingredients
8.5 lbs. Floor Malted Pils Malt
4.5 lbs. Munich II
1.8 ozs. UK Choc Malt ( for colour adjustment )
19 g German Magnum at 60 min.
56.70 g Tettnanger at 30 min.
34.50 g Tettnanger at 10 min.

1 L starter in fridge on Sept. 10. Stepped up to a 3 L after that. Added 500 ml to a mason jar for over build on Sept. 16. I didn't take any pics as it was an unremarkable brew day. Maybe later...
BREW DAY NOTES
Quick brew day. Wort tasted more like a Marzen than a Maibock. I forgot to aerate yesterday. Not sure if I can aerate the next day or not. I asked the MOB and awaiting a reply. The MOB said that if there is no activity, then go ahead and aerate. Took Grace to work and when I came back there was a full krausen on top, No aeration I guess. Seems to be fermenting fine and it did start way earlier than usually does, so if that is a sign, it is a good sign.

I just turned off the keezer and let it warm up. I already tossed this over build yeast as I am done with lagers. I can't find Kolsch yeast ( WLP092 ) any where. That is odd but it is 2020.
Sunday Oct. 4 - On bench and still bubbling every 50 seconds or so. I do want to keg this so that it is
ready on Oct. 12, which is Chris's Thanksgiving. I do think I will be tossing this out as it used the same yeast as my Marzen which was tossed in the swamp because it tasted like shit. Yes, same as the last one but same yeast, so of course it sucks. Letting it sit in the fridge until I need the space, sample, and most likely toss it.

Almost tossed this out. Sitting on the floor downstairs for a week or so. Tasted like weeds. It isn't great now, but certainly better than before. Needs some C02 and it is now in the beer fridge and am going to toss it upstairs after some more carbing up. They say never toss beer, you never know and this proves it.
UPDATE ON AUG 2021
My beers are normal tasting since I have been adding my sparge salts to the boil kettle. The water profile for lagers is a bit lower too, but started that on Aug 23, 2021.
