Making beer just for the hell of it and besides,  tomorrow it is going to rain, freezing rain and flurries. Trying out some flaked rice. Haven't used it in a long time.

Ingredients

10 lbs. UCM
2 lbs. flaked rice
11.7 g Magnum at 60 min.
28.35 g Saaz at 0 min.
US-05
Water Profile - Yellow balanced.
PH - 5.30

O.G. - 1.040 - 67% - ( turned up the mill notch to 4 after this one )
F.G. -  1.007
% -      4.33 - 82%
SRM - 3
BU - 15

If this isn't too fruity, I may make this with a lager yeast this summer. I have to do something about my efficiency. I know my mill is old, so I guess I have to keep turning up the notches for now. A new mill is on my list but not now.

A big difference in the smell and look of this using rice. Didn't get that cloying, deep wort smell I usually get in the boil and the mash. Very clear during the mash, but as usual using Saaz hops at 0 min, it turned hazy and stayed hazy. Gelatin will clear it and will filter it if not.

Next morning - Nothing, but not unexpected. 64F. Turned on heater last night, but didn't do much.
                          Turned it up higher this morning before hockey.
Nov. 29 - Heat on, heat off. 64 F. Having trouble again keeping the temp at 66 F. Guess I have to
                turn on the wall heater and try to dial it in if possible.
Dec. 3 - Still going steady.
Dec. 7 - Seems to be done. May keg tomorrow and clear it right away when kegging.

Added gelatin when I kegged it. Purged the keg real good. Was very careful not to splash when I kegged it. Took my time and did it slow. This will be clear by Dec. 22 or close to it. It would be much better if it had a chance to age 2 - 3 weeks like all beer. Hope to have my Lamb & Slaughter ready by boxing day to watch the World Juniors.

Transferred to another keg and am carbing it up. I am shocked there isn't some sort of off flavour. My last 2 brews have it and this is way lighter than them. The use of rice hides nothing. Of course, it can rear its ugly head at any time. Cleared up nicely, not bright, but quite good. I assume it will get clearer in time. There was a lot of trub at the bottom of the keg from the primary which is surprising. Very bland, low bu, low hop aroma too, just what I was after. I think I will do one in the summer using lager yeast to see the difference. I think if I used a bohpils water profile, this would of tasted much better.
