4 Dog Pub Ale - Wednesday, November 13, 2019

Making a light, English ale along the lines of a Boddingtons or similar beer. Using my slurry of Wyeast 1318 London Ale III.

Ingredients

11 lbs. UCM
1 lb. Bairds Carastan ( 30 L )
EKG - 34 g - 6.4% AA at 60 min.
EKG - 28.35 g -  6.4% AA at 0 min.
Wyeast 1318 London Ale III slurry ( 300 ml )
Water Profile - Yellow Full
CA - 50
MG - 7
S04 - 55
CI - 70
PH - 5.35

Mash

GYP - 1 G
CI - 2 G
EP - 1.3 G
Lactic Acid - 1.5 ml

SPARGE

GYP - 1 G
CI - 2 G
EP - 1.3 G
Lactic Acid - .4 ml

O.G. - 1.042
F.G. -  1.012
% -      3.94
SRM - 5.6
BU - 25

Even though the unwashed slurry is 2 weeks old, I am still going with it. I will pitch as much as I can and will see what happens.

                                                     Yeast slurry pitched @ 1 pm.

Nov. 13 - Going okay. 64 F. Turned on heater for now.

Okay so far. No odd taste, just like it's sister brew right beside it. Keg on Dec. 1st, or around there.

Taste is okay. Seems like it is kind of like a crystal malt that is watered down. Will see later on.

                                                          TASTING NOTES

Not that great. Has an oxidized taste to it. Did I splash too much when I kegged it? I don't think so. I will transfer to another keg soon and all I can do is punch it up and see how it tastes. This is supposed to be my xmas beer, not impressed at all. Transfer to another keg, carb up and let it age. It seems to be going away after my second fast carb up in pop bottles. This is nuts!! What was I tasting this morning and where did it come from? Where did it go? Hope it stays away. Will transfer to another keg soon.

                                                        EPIC DIAREHIA FROM YEAST SLURRY

I had the farts last spring when I used a yeast slurry that I didn't wash or rinse. I did it again with this brew, but not only having the farts, I had epic shits and a big gut ache. Over building my yeast for now on and this won't happen again. This is my theory and I think I am right. DO NOT FART, YOU WILL BE SORRY...

                                                                      UPDATE

Cleared up but the taste is so so. I am not sure where it is coming from. Clean yeast, simple recipe. Water profile? Maybe. Last time brewing this, at least the future ones will have a srm of at least 10. Still have these hops to use up and I won't toss them out. This has an odd and nasty taste to it. I smell something like incense or perfume too, god, WTF!
