5.5 Gallons

Using Omega Bayern 114 Lager yeast for the first time. OBK sent me this 134 day old yeast and charged me full price too, nice of them. $11.50. Not buying ingredients from them again because I am sick of their old, stale ingredients. Equipment? Yes, but that is it.














Ingredients

7 lbs. Barke Pilsner
3 lbs. Munich I
2 lbs. Vienna
1 lb. CaraMunich III
1 oz. UK Choc 400 L
15 g Magnum - 60 min.
28.35 g Hallertauer - 30 min.
28.35 g Hallertauer - 0 min.
Omega Bayern 114 Lager Yeast ( 141 day old yeast. 1 L to a 3.5 L starter )
Water Profile - Amber Balanced

Brewed, cleaned up, and waiting for the wort to cool down. Pitched the yeast the next morning at 10 C. Temp - 52 F. Activity the next morning. 12 hour lag time, beats 72 hrs with WLP833.

Day 1 - Nice head of krausen on top. I am losing some beer through the blow off hose, but that is because I stupidly forgot to leave room for the liquid yeast. All is good so far.
Day 2 - Same. This yeast is a work horse, especially for a lager yeast.
Day 3 - Still very active. Foam in blow off pot. This Marzen may be interesting to taste, as I have
              never used a lager yeast this active before.
Day 4 - Still going good. Getting the usual ass smell, not much sulphur smell yet.
Day 5 - Slowing down now. D-rest either tonight at midnight, or tomorrow morning. Give it today.
Day 6 - D-rest today. Just turned fridge off. 7 am.
Day 7 - Temp - 20 C. Still going strong. Setting for 66 F. Warm weather coming up and I will not
             be here.
Day 13 - Checked it after NY on Sept. 23, done. Ramping down to around 10 C. This old fridge
             doesn't like to get too cold. Keg in a week or what ever.

No use to toss new wort on top if this sucks. Will re-use the yeast and try to clean the carboy. A real in the ass to clean. Using the Conical after I give it a good oxiclean overnight along with my SS immersion chiller.

Well, okay, but way different from my usual yeast. If my 1437 has this taste, I will dump the yeast
and go back to WLP833 or Escarpment Munich. However, I did notice the taste of this beer before I added it to the carboy and yes, it did have a very slight smoky, or a roast taste. 

                                                                     UPDATE

Starting to lose that slight smoky taste. Maybe I will re-use the yeast, or maybe not. Undecided. I do have 2 weeks to make that decision.
