A Robobrew. Changed the recipe a bit. Re-using the previous Marzen yeast if it smells and tastes okay. Sick of try to clean my carboys. I guess I need to clean and get my Conical back into action. I have to do a double brewday to fill it, but may just do 6 gallons in it. Not now, but later...
Ingredients
8.50 lbs. UCM
1.5 lbs. Munich I
1 lb. Barke Pils
1 lb. Vienna
12 ozs. CaraMunich I
2 ozs. UK Choc
15 g Magnum - 60 min.
26 g Hallertauer - 30 min.
28.35 g Hallertauer - 1 min.
Omega 114 Bayern Lager slurry
Water Profile - Amber Balanced
PH - 5.39 - ( Added .04 ml Lactic Acid to mash by mistake ) Should be 5.43, should be okay.
O.G. - 1.046 - 73% - Why the drop in efficiency?

Since the previous beer seems okay, this one is a go. Slurry is in the flask. No, I am not going to make a starter, just go with what I got. I didn't get a whole lot, around 500 ml, but looks like 400 ml now. Use it and RDWHAHB. My keezer is not cooling down very fast, hmm... It is dead. Only goes down to 14 C. Looking for a new one. Now it doesn't work at all. Caught the blow off water dangerously close to getting in the wort because of the crash cooling for the next day when I pitch the yeast. Hope none got in. I wonder how different this will taste compared to my Marzen. I am even doing one using Munich II and a bit of UK Choc malt for colour. This may be my winter recipe as it is simple and lighter. Going for that Munich lager in the beer store which sells for $3.45 a bottle, way too much but excellent beer. I found that beer from Poland which is just as good for $2.65 for 500 ml. Excellent beer, my go to beer for when I am out of homebrew.
Pitched slurry at 9 AM.
This was the thickest slurry I have ever used. I didn't get a lot, but what was there was quite thick. Hope that is a good thing.
Day After Pitching Slurry - Activity at 4 pm. - 7 hours.
Day 2 - Going good. Not as active as the first time using this yeast. Fridge seems to be struggling
to lower the temp to 52 F. Stuck at 54 F.
Day 4 - Still going good. Steady, but not like the previous one. D rest in 2 - 3 days. I already smell
sulphur, so keep an eye on it.
Day 5 - D-rest today. Kind of slowed down, so I shut the fridge off and shut the door. This will slow
down the process.
Day 6 - D-rest almost done. That was quick. Still bubbling away, but acting like a cold fermenting
lager. 68 F. Brewing a bitter on Oct. 14, so I may not have time to do a ramp down.
Taste on Oct. 8
Pretty well the same as the last one. Hmmm, I guess I won't be re-using this yeast. Will adjust the recipe to make everything a lighter lager.
Kegged on Oct. 19
I don't expect a lot out of this beer if the previous beer brewed with this same yeast is any indication. Keg it and clear it and go from there. Not going to re-use this yeast as I am done with lagers until
next spring. This has a bland taste which to me means that there are no off flavours yet.
Taste on Oct. 25
Okay, but has a roasty taste to it. Too much roast for a lager. This is my last Marzen and if I like my bitters this winter, my last lager. I want more flavour and quicker turnaround to my beers.
FINAL TASTE
This is predictably a very clean lager. However, I am only getting the choc malt ( 400 L) taste. If I do decide to do another lager, it will have only 2 ingredients. 2 row and either munich or carapils.
