Storey Steamer - Monday, January 28, 2019 - Double Brew Day

Carboys and then use this yeast to toss in the Conical for your next batch.

Done using the older yeast as I think I have used it enough times. I think the last brew tastes funny. I know it is of me adding the salts a few minutes late and the mash not getting 100% of even that small amount. Whatever, only brewing this style of beer for now on. Using carboys and will wash the yeast and see from there after our holiday. No Nottingham yeast ever again. No matter what the style, it always sucks. I made 5 brews last year and they all sucked with that yeast. No more dry yeast.

11 lbs. UCM
1 lb. Carahell
8 ozs. Victory
2 ozs. UK Choc - ( 400 L )
15g GR NB - 9.9%  AA at 60 min.
71g Saaz - 2.8% AA at 60 min.
56g Saaz - 2.8% AA at 0 min.
WLP833 German Bock with a new starter.

This may not taste as good as my June 2018 SS because of using just 2 row, but I will get some Pils malt in London if this is going to be a good beer. Re-use this yeast for one more beer and toss it after that.

                                     BREW DAY NOTES

Double brew day. Too messy, too long to sit around watching the boil and too boring. Will do it the next day though when everything is cleaned and ready to go.
Forgot the salts in the second brew just for a minute. I stirred them in real good. Hope I wasn't too late. Second brew had a ton of trub in it. When it was clear, the colour was fantastic. Just like the above pic. This can be kegged and the yeast washed before we go on holiday. When I come back, you have to make a starter even though it works when I toss everything on top. Wort tasted fine, very malty which I am after. Not sure about the hops though, good bitterness but hop aroma will have to wait until I keg it as it is too sweet now. I have 3 weeks to keg this, wash the yeast and save it for when we get back in early March.

                                                      NEXT DAY

 - One carboy is going good. Krausen head too. However, the other one is doing nothing yet. Small pods of something on top and that is it. The active one is the one I had to step up and the other one is just a 3 L starter in the big flask. Hmmm... It did start late that night. Still a couple of days later and it is still kind of dragging it's arse. No matter as it can have all the time it wants. I may go with WLP810 San Francisco Lager yeast if I don't buy German Pils Malt. Easier to work with and easier to do a D-rest, along with not much difference in the taste using Canada Malting 2 row.

                                              DAY 2

Going good. The 3 L starter carboy seems to be slower than the other one which I stepped up.
                                             DAY 3 and 4

Same. In the fart smell stage now.

                                              DAY 5

D-rest soon. Still not sure when to do it. Going real good, both carboys. Fart smell still there. 52 F. Big krausen still on top too. Definitely on Day 6 or 7, no later than that. Will start the D rest tonight, ( Feb. 2 ) after I fill the hot tub up with water so I can shut the door.

Almost done the D rest. Temp was kind of high - 72 F but only for a day.

                                                 Feb 9

D rest is over and a cool down is on. I noticed the water in the hose is creeping up so I am keeping it at 50 F until I get back from the Lake. I still think it might be doing something so I may keep it there until kegging day. A lot of trub and yeast on the bottom of the carboys. Will wash yeast and use it for another batch in early March. I will make a big starter from all of the yeast to toss in the Conical. I think I will go back to making a Marzen as it seems to have lots of malt flavour and all I have to do is tweek the hops, as in try to get a good firm bitterness out of it. Yes, out of style, but who cares?

                                              Feb 12

Sampled. Very clear and a wonderful colour. Malty and kind of a Pils like taste, but not with 2 row malt. BU is medium and hop aroma is low. Nice beer so far. Glad I got 2 kegs of this. Need to fill 8 kegs with this or a Marzen before summer. When you get back from vacation, decant yeast into jars or a flask to see how much yeast cells you have. Decant all of it before making a starter. Just pour your starter wort on top. Ask how much to use if in any doubt.

                                             Next Time

Not sure if I need to make a starter or not. After this, I will boil 1 gallon of water the day before and let it sit on the table over night. On brew day, keg my beer while the mash is on and add half or 3/4 of the water to the carboy. Add that to another gallon jug and let it sit in the fridge until I am done brewing. Decant beer and toss in the milky yeast until you get to the dark stuff. Stop there. No starter needed. However, Homebrew Talk is having this discussion right now and I will follow it to see what they all say about it.
             
                                             GELATIN ON FEB 19

Sampled on March 2 for clarity, ( 11 days ). Clear!! Needs a bit more aging, but will be an okay beer. Will go with GR NB hops until they are gone and just go with either a Marzen or GR Pils or both. Whatever sticks out. Not tasting any Saaz hops and too much choc malt taste. 2 ozs. was too much. Nothing I can do now until I buy/decide on what malt to use to get the srm up to past 8. Will carb up a 2 L bottle to get a better taste test. I know it will mellow out, beer always does. If I can't get a noticeable Saaz flavour from my Marzen, I may just go with a Steam Beer using GR NB and finish it with Cascade. Way cheaper too.

                                          Final Tastings

I think this tastes too strong. Not sure why since I have brewed this before. It may mellow out in time though. As of March 13, it has turned into a real nice beer. The same as my June 2018 SS, except using Saaz instead of Cascade.
