Storey Steamer - Saturday, June 23, 2018
Carboys
This beer just has to be good for smoked ribs and hopefully a pool party.
Ingredients
23 lbs. Bohemian Pils Malt ( mash for 90 min. )
2 lbs. Carahell Malt
1 lb. Victory Malt
4 ozs. UK Choc Malt
62 g German NB @ 9.9% AA for 60 min.
57 g Chinook @ 12.30% AA for 0 min.
WLP833 - German Bock Lager
Water profile is Amber Full
CA - 51
S04 - 56
CI - 64
PH is estimated at 5.40
1.0 ml of Lactic Acid in mash
.8 ml of Lactic Acid in sparge
Add Acid at room temp water before heating.
O.G. - 1.054
F.G. -
% -
SRM - 8.8
BU - 35
Will change the brew date so I can use the conical instead of the plastic pail. I did taste a lot of plastic from the Kolsch, so no more using it. Will buy some more plastic carboys for my robo brew this fall/winter. Not a good start as I forgot to add the salts at dough in. Luckily, I quickly remembered to 10 min later. Need to make notes every where for a reminder. Duh!!!
FERMENTATION NOTES
DAY 1 - 5:30 AM - Getting read to aerate the wort and add the 833. Have to wait for the slurry to warm up a bit. Got a big mess to clean in the laundry room and the outside. Glad I already cleaned my kegs. June 26 - Finally some real activity. A big rotten egg smell already. Pitching at 60 F may have something to do with that. Have to get in a D-rest for sure. Day 8 - 10, depending on activity. D-rest on day 5. I think I just got it in because activity really slowed down since yesterday. Quite active on day 2 of a D-rest. Rotten egg smell is lower which is good. Day 3 now in the D rest and still going, but finally slowing down a bit. Will keep it at 66 F until it is completely done. Need another day of D rest. Still going a bit on day 4. Ramping down after the D rest. Will take awhile to get to maybe 40 F. Can keg on July 9? Only 15 days of fermentation though. Need time to clear with gelatin. Still on track to keg on Sunday July 8. Clear and carb it up and toss it upstairs in the Pub fridge. Need a 5 lb. refill of C02 unfortunately. Added gelatin on July 9. It will get a full week or a bit more to clear and get tossed upstairs. The Victory malt made this beer. I only get that bready/cracker taste when I use it. Just don't use too much the next time you brew it.
Tasting Notes
I like this beer. Cleared up nicely and the taste is just about right where it should be. Carahell is an incredible specialty malt. The same brew with Nottingham sucked. No idea why. Using lager yeast for now on. This is my best beer of 2018. Maybe my Helles will be better, I don't know yet.
