Cru International - Chardonnay - 8L 5 Week - April 18, 2025 - ( June Something ) ( 26 bottles )


 

Pitched Yeast on April 18

The OG was quite high, 1.10 ( I just dropped the hydrometer in the pail. Could of go caught
on something. No matter but be sure to check the gravity when it is time to rack.

Day 1 - No Activity
Day 2 - No Activity
Day 3 - Finally doing something.
Day 9 - Seems to be done.
Day 14 - Rack to a carboy on Sunday, May 4. It is done I think since no activity in a few days.
               .998 or lower according to the instructions. This is when you add the rest of the stuff
               and degas it. 
Day - 35 ( Filter and bottling day - May 25 )

Racking Gravity - .992 The OG was odd, like 1.110? Maybe my hydrometer is off.

                                             RACKED TO A CARBOY 5/07

I made a mistake and added the stuff instead of de-gassing it. It usually starts to clear the
next day but nothing is happening. Checked it on 5/09 and yes, it is slowly clearing at the
top of the carboy. It will take awhile and I can wait until that happens because the filter
may clog up trying to filter hazy wine. I need to get a hard copy of the instructions for
this wine and others. They don't include instructions and our printer won't print them
properly. I am going to try and get Grace's printer up and running again.

There is about an inch of clear beer on top. At this rate it will take a month to clear. I guess
there is nothing to do but wait.

I really don't think it will clear at all so I am going to filter it with the COURSE filter and
then go to the polishing filter to finish it. I will lose a litre of wine or more doing this.
One thing I can do is add my clearing agents again and see what happens. Done. I did this
on May 14.

Not as good as the Costco wine but considering the double dose of clearing agents, maybe
that is the reason. It seems okay though, better than Pino Grigio.

At least I will have or should save some bottles for topping up my next batch.
