Storey Brew - West Coast IPA - Sunday, December 22 - 2024
Making my own West Coast Style IPA because I already have the malts so why not give this a try? I do remember many, many years ago the Brewhouse kits used honey malt. This will only cost me $19 ( hops and yeast ) because I get free delivery to Bobcaygeon Brewery but I have to buy a 6 pack of beer. Better than bloody shipping which is out of this world.
Do not forget to tell Brewers Pantry to deliver to Bobcaygeon Brewery. They deliver it on Tuesdays. I am looking forward to brewing this on the 22nd. No hockey, no storey xmas, just beer and world juniors on tv.
Ingredients
11 lbs. Rahr
4 ozs. Honey Malt
2 ozs. CaraFa Special III
25.3 grams Magnum at 60 min.
2 oz. Cascade at 15 min.
2 ozs. Cascade at 0 min.
1 oz. Cascade dry hop in fermenter 3 days before kegging.

Lactic Acid - 1 ml ( for some reason I had written down .5 ml )

A good brew day, no disasters which is good to see. Pitching yeast around 11:30 am or so. I did over estimate the sparge and had too much wort in the kettle. 2 L too much, but it did get to 1.044.
TOO COLD IN BASEMENT
It got down to 62F and I turned on the wall heater but it is in the other room. It is slowly getting up to 64F, but still doing nothing. Wish I had a brew belt. No room on the bench since there is wine on it.
Day 1 - Up to 64F so I will leave it for now and see how it goes. It should heat up a bit once it
starts to ferment.
Day 2 - 66F. Trying to keep it warm enough to finish the job.
Day 5 - On the bench now. Playing with the wall heater to get it around 66F - 68F.
Day 8 - 66F. Almost done. Dry hop today?
Day 9 - Dry hop today - 1 oz Cascade
KEG ON JAN 4 ( day 12 )
TASTE ON KEGGING DAY
I dry hopped for a little over 3 days now so it is time to keg it. Hard to tell since there is trub, yeast and bits of everything near the bottom of the carboy. Smelled good and it does have some good bitterness at this stage.
ADDED GELATIN ON JAN. 11
I don't think I will be able to transfer to another keg because I am not supposed to lift anything
which will pop my lense in my eye. I can though, install it in the fridge and transfer from one
keg to another than way. Cleared up on day 7 after gelatin. Colour is fantastic, just the same as
the Festa Brew IPA. Great head too. Hop aroma is not as strong as the Festa Brew. Not sure
what I can do about that besides adding more hops. All in all I am happy with this brew. Would
2 ozs. of Cascade be better the last 3 days of fermentation?
This is still a good beer. Darker than I wanted but the taste is still there. Does need more dry hops.

It was okay beer. The hop aroma didn't last as long as I liked. I will fix that for the next one.
