Smoking 2 or 3 ribs and will use the rib rack. There is no way around the spritzing of them
when they are on the rack. Just hope the spices don't drip off when I spritz them. Since I
am the only one living here that likes these ribs, I may just smoke 2 ribs. Currans will eat
them, at least Frank will. I may smoke 3 just to have lots. Need to buy one more Rib though.
Weather is supposed to be good, so it is a go.
SMOKING SCHEDULE
1. Smoke at 225F - 275F for 2 hours.
2. Double wrap in foil for 1 hour at 275F on the smoker or the oven.
3. Unwrap Ribs, add bbq sauce, butter slabs and honey. Toss back on the smoker around
275F or in the oven at 275F if you think you won't get an hour out of the remaining
charcoal. No wood needed. Look into using a mixture of 50/50 water and apple
cider vinegar in one of those condiment bottles the 4 Dollar Store sells. The guy on
You Tube does that and it seems to get into the ribs more easily.
Mixed the dry rub up and got 2 shakers + some leftover in the plastic container. Only thing
I need is a big plastic cutting board. Like 3' X 3' or slightly smaller to cut ribs on. Amazon
I guess.
RIBS TASTING
One rib was kind of dry and the rib that American had in the fridge was fall off the bone.
They were pulled back from the bone also, which is a sign that they were cooked. I had
them on the smoker in foil for around 2 hours and they didn't burn. I could not get
the smoker past 225F which was odd. I had the water pan in the smoker which keeps the
temperature lower. Without the water pan, it can get quite hot, over 300F.
1. 2 hours smoke.
2. 1 hour wrapped in foil and back on the smoker.
3. 1 hour in the oven at 275F but take them apart and add honey, slabs of butter and sauce.
4. 1 hour wrapped in a towel and tossed in a pre-heated cooler.
5. Bring out and sauce them and toss on the bbq for 2 minutes meat down to set the bbq
sauce.
TOTAL TIME AROUND 5 HOURS.
Maybe start smoking at 11 am instead of 12 noon. That way we can eat at 5 pm or so.
