Maggie Kolsch - Saturday, August 31, 2024
a slightly more hop aroma as in a late addition. T storms all night but gone at 5:30. Sticky
out but wet. Should dry up by the time I clean up. I added up all of my Munich malt orders
and can't account for 1.8 lbs. of it. No idea how much I added today. No matter, I am not
using it for awhile and will most likely just use Pils or 2 row. I have 1 batch left and it is a
Robobrew brew because there isn't that much left.
Ingredients
22 lbs. German Pils Malt
1 lb. Munich I ( more like 4 ozs. However nothing is labeled since the grain got mixed up )
35 grams Magnum at 60 min.
56 grams Hallertau at 5 min. ( I want aroma only )

Water profile, salts amounts, mash volume etc. is the same as the previous batch except the
BU are higher.
BREW DAY NOTES
Brew Day - Almost forgot the lactic acid. Duh! Read the sheet stupid...
The valve in the mash was not used in awhile and now I know why. It leaked. No
matter where I tightened it, it leaked.`Over the fence and into the swamp it goes.
Did not lose a lot of wort, but it was a real pain to deal with. Wort in Conical
around 11 am. The valve in the kettle was malfunctioning also. Slow, real slow.
This happened a few years ago but nothing came out of it. No idea why it acts
like that. Will take a look at it and then either try with water or throw it over
the fence along with the leaking valve. The valve seems okay. No obstructions.
I will have to remember to use the other couplings next time I brew with this
system which will be next May. My theory is that the coupling at the bottom
of the kettle was turned around and was hardly letting any wort through. Or,
the connection was leaking back into the kettle therefore not drawing a lot of
wort through. When I do use it next spring I will have to do a test with water.
Pitched Yeast - 8:15 am
Day 1 - Aerated wort with the new regulator. Works like it should. I left the hose on since
I don't need it. Aerated for 3 minutes.
Day 2 - Going good. 64F. May leave it there.
Day 3 - Same.
Day 4 - Same.
Day 5 - Same
Day 6 - Slowing down.
Day 7 - Real slow. I would like to check the gravity, but hard to do using the Conical.
Not sure if I should raise the temp, shut the fridge off to let it finish?
Day 11 - Almost done. There is still some activity every 30 seconds or so. 66F. It is 72F
downstairs so I can't shut the fridge off just yet. Keg when done whenever
that will be. I would like to make my last Kolsch on Aug. 20.
KEGGED ON SEPT 24
Not brewing another Kolsch. Had enough of them. I do have malt left over but will blend
it with my UK malt later on in the fall. Hoping to buy some new malt when we go to
Ottawa in late September. I think that I didn't use enough Hallertauer since considering
this is a Conical brew. Perhaps 4 ozs. instead of 2. Wish I had some hop oil. Just grab my
syringe and squirt in a ml or so and give it a taste. This is why I am going to brew UK
because I can adjust the malt bill easier than the hop bill. I still have a lb. of 1.8% AA
Hallertauer hops. Some of the UK recipes use Hallertauer so I may look into that.
GELATIN ADDED - SEPT. 25TH
Will take a sample today to see how clear it is. I never did sample it and never took a FG. I
thought I was done with Kolsch's but may change my mind but not sure. If I am happy with
my UK beers, nope, stay the course. This beer is okay, not much better than the last one. I
assume it is the yeast as my previous beers using WLP029 were fine.
