I like this style of beer better than stout. Always creamy, ( even without oats, flaked barley ). I use my stout faucet without nitro as it is just too bloody expensive. An overnight hit of C02 brings out just enough C02 to give it a somewhat creamy head with the stout faucet. I guess this is a poor man's version, yup, that is me.
CMC - 8 lbs.
Crystal 120 - 5.5 ozs.
Choc Malt - 3 ozs.

Special III - 1.8 ozs.
35.4 g EKG at 60 min.
11.5 g US-05 - ( spare sachet )

BREW DAY
I forgot to calibrate Mr. Robobrew when I mashed in. I hope it is somewhat accurate. The screen waited until it said 150 F before coming back on to get it up to 154 F. I thought it was around 2 F, not 4 F. Other than that, everything was fine. Clean up is a bitch in the winter, but nothing can be done about that.
US-05 pitched at 11:30 am.
Day 1 - Signs of fermentation around 2 pm.
Day 2 - Going good.
Day 3 - Same. 66 F.
Day 4 - Same. 68 F. Will turn on fridge if it gets any warmer.
Day 5 - Slowing down a bit, but seems fine.
Day 6 - A little slower now. Up to 68 F.
Day 10 - Still seeing activity. Tossing on the bench before I brew my House Dust IPA on Dec. 18.
I have a covid booster shot on Dec. 19, so switched my brew day.
Day 11 - Seems to be done. No activity or very little. Will keg soon in a day or so. This is my beer
for Dec. 24 and Dec. 25. Saving my Kolsch for the WJ.
What can be said for a 3% beer. Something to drink I guess. Carb it up tomorrow over night and put together your stout faucet for a poor man's Guinness. I carbed for 24 hours instead of 12. Do not want too much foam when I use the stout faucet. Okay beer, not as good as the first one.
Not happy with this beer. Not really a roast taste, but it is a very light beer.
