Must Temp - 68 F.


                                                                 Yeast Pitched at 12 pm

Next Morning - Still 68 F. Has to get to at least 70F, 72F is best. Bubbling away, but real slow. Hot and

                          humid weather is coming soon, so it will get warmer in the basement. 

Day 2 - 70F. The temp controller can't be set for a higher temp than it is cuirrently. This is an older

                     model. It is getting hot today and tomorrow so I should be able to do it then. Going

                     good though.

Day 3 - Having a hard time getting the temp just where I want it. I don't trust the temp controller as

             the calibration is out of sync. Also, it is hard to see the temp strips. I need a mirror.

Day 4 - Still have to turn off the controller as it gets too cold.

Day 5 - Turned on fridge again.

Day 6 - Slowed down a bit. Fridge on again. Usually turn it off at night.

Day 7 - 72 F. I have to keep turning on and off the temp controller. I need to figure out this temp

             controller to set it to 21 C. It won't work to anything over 20 C.

Day 8 - Still going but slowing down. Letting it go until day 11 or 12. Check gravity when you

             bring it up on top of the keezer to settle before racking.

Day 11 - Raised it out of the keezer and will rack it on day 12, busy today.

Day 12 - Tossed them both back in the keezer. It is just too hot now. 80 F in the beer

               room. God, wish it was that warm in the winter down there. 

Day 14 - Racked the white. Red was racked on day 12.

                                                 Re-Rack on July 11 or 12

Add the stuff in the order they say and get ready to filter when the time is right, around July 21 or so.

Racked the red and white to carboy's and added all the stuff they said.  Add Chitosan tomorrow and can filter and bottle on July 28. The filter plugged up again, so I am going to use a course filter for reds.
