 I have an empty ferm chamber and 2 sachets of 34/70. May as well make a Helles and be done with it for 2020.


Ingredients

10 lbs. GTA Pils

8 ozs. wheat

4 ozs. acid malt

62 g Saaz at 60 min.

2 sachets of 34/70

Water Profile - 75% RO and 25% Spring

Since this is a lager, I am going to aerate this wort, but just toss in the 2 sachets of 34/70. I can't remember using it before.


O.G. - 1.042 ( 79% efficiency ) Back to a normal reading.

F.G. -  1.010

BU - 20


I really need to buy a big accurate pitcher for adding RO and spring water to my mash. I seem to be getting not enough water and sometimes end up with too much water. Dollar store may have something.

Wort tasted great. I pitched the yeast at around 10 pm on brew day. The temp the next morning said 8.5 C. Set it for 10.5 C so am wondering about the 2 C difference. Set it for 11.5 C.

Next Day - Most likely won't see anything today.

Wed Dec. 16 - Checked at 8 am - Fuck all. Just seeing signs of life at supper time.

Sunday Dec. 20 - Been going good for a few days now. Had to replace the cheap Canadian made

                             thermowell with an American made thermowell. Works better. I don't know why

                             they didn't have a round end instead of a flat pinch end which puts a crack in the

                             bung. Crap. Should be thinking on a d rest soon. Today is day 5, but will do one

                             tomorrow since this started late. Big sulphur smell.

Mon Dec 21 - D rest today. Cool down here though, may not hit mid 60's.

Tues Dec. 22 - Still in the middle of the d rest. May toss it on the bench and turn the wall heater on. I

                         have to bring out the lager to the laundry room first. A lot of beer with no place to put it.

Jan. 2 - Seems to be done but busy today and painting tomorrow. Can let it go another week or so. I

             just want to give it a taste to see how the single 60 min. hop addition tastes. The late addition of 

             noble hops are not to my taste, so not doing that anymore. I can always up the BU at 60 min if 

             needed, but can't do too much. There is definitely a window of how much or less to add.

Jan. 7 - Done, just have to finishing painting and I can keg this.

Taste is fine for a fast ferment. It does have a nice Saaz hop taste though which is good. Now to fine with gelatin and filter becasue I can and CPBF in my PET bottles which I have had for 5 years and  never used.
