Lamb & Slaughter , Sunday, Oct. 27, 2019 - ( Mystery Disaster Beer )
5.5 gallons.
Different recipe from the last one as I am using different ingredients. Hard to compare which one I like as this one is lighter than the previous one. I would like to make lighter looking bitters, but still have a good caramel/toffee taste. Thinking on going with 10% Carastan malt like I did 15 years ago using well water. I really should send away a sample of my well water to see if I can figure out how to brew with it.
Ingredients
11 lbs. UCM
8 ozs. Simpsons Double Roasted Crystal - 112 L
56.70 g EKG - 60 min.
Wyeast 1098
Water Profile - Amber Full
O.G. - 1.040
F.G. -
% -
SRM - 7.4
BU - 31
I checked my records back in 2013 and found a bitter which had almost the same ingredients as this one. I do remember how good it tasted. I did use Epsom salt, just gymsum and cal choride. I am doing that today. I remember reading that is all you need, just half a teaspoon of each and that is it. Maybe I am over doing it with the salts. Will see in 2 weeks or so. Keep it simple I say. I do think that if I buy hops and malt from UCM, I get fresh stock. Not sure about the hops though, but they have never given me an odd taste, not ever. I don't trust HB stores, they will sell you old stock just to sell them. Try to avoid them for ingredients besides yeast if possible.
DISASTER BREW DAY
Hose leaked and 2.5 gallons of wort ended up under the dryer, stand up freezer and chest freezer. Cleaned up and mashed 4 gallons of wort along with the 2.5 gallons I ended up with from the first mash. No idea what to add for brewing salts, winged it, mashed 7.6 lbs. of 2 row along with 8 ozs. of the double roasted malt which I should not of used. All of this because I didn't clamp that stupid hose and I was on the computer doing nothing waiting for the 90 min. mash to finish. I changed the hose to the original one and clamped it. Easy, too 2 minutes. No matter, I will never walk away again, but if I have to I will stop the pump off.
NEVER AGAIN WILL I WALK AWAY
Yeast pitched at 2 pm. May the beer gods be with me...
Going good the next day. I have no idea how this will turn out. Did the mash work with half and half wort and water? Who knows? I can't re-use the yeast anyway because if this beer turns out weird, so will the next beer. Besides, I have my 1318 London Ale III in a flask begging for wort.
Oct. 30 - Still bubbling away, but slow. Slower than the previous beer though. Fridge off.
Nov. 6 - Tried to take a sample but the beer thief wouldn't go through the air lock hole in the pail.
