5.5 Gallons
Since my Conical needs work, I am using carboys most likely until next summer. A slight change of the recipe since the last one just for the hell of it. Scrubbed it with BKF, but it still needs an acid wash with PBW sometime this fall when I put it away for the winter. Get it out as early as possible next spring as I want to brew a lot of beer and not have to brew in the humid conditions of summer. Makes a lousy brew day, just hate it. Hopefully I can brew lots of beer next spring so I don't have to brew a lot in the summer. I will however, brew with Mr. Robobrew all summer long, but not have to. I just like to brew beer.
Ingredients
10.9 lbs. UCM - ( supposed to be 11, but close enough )
8 ozs. Honey Malt
8 ozs. CaraMunich I
4 ozs. Crystal 120
2 ozs. UK Choc Malt - 300 L
US -05 - Pitched @ 1 pm.
20 g Columbus - 17.3% AA at 60 min.
56.70 g Cascade - Hopstand at 5 minutes into chilling. Approx. 180 F. Missed it, 169 F. Hard to tell though without stirring it.
28.35 g Cascade, dry hop on day 15. Should of been on day 10. Keg on day 15, but it was still active.
Water Profile - Amber Balanced
O.G. - 1.050
F.G. - 1.007
% - 5.9
SRM - 10
BU - 40
PH - 5.42
BREW DAY
Very humid today. Hate this weather. Looking forward to the cooler fall and winter weather, only for brewing only of course. Pitched yeast at 1 pm. I aerated the wort, then realized you don't have to for dry yeast. Started way earlier than the last one that I didn't aerate. The last one took 20 hours to get going and this one got going sometime during the night. The srm was nice. A golden amber, but not really amber, not dark at all. This is my target srm for most of my beers now that I am brewing British ales and also finishing my AIPA hops in stock. After that when I buy my 5 lbs. of EKG hops from UCM will be British style ales for the rest of this year and 2020. I decided earlier this year to get down to brewing one or two styles maximum. Maybe a one off, ( like a Marzen at Xmas ) and that is it. Much easier to buy supplies in bulk. I am not going to join the GTA Brews malt buy at the moment. I am not that serious of a brewer to go to all that cost and driving. Going back to my roots and just brew simple beers that I used to brew back in the early 2000's. My beer was good back then with simple ingredients and no lagers. Except for my Marzen, I am done brewing them, but once or twice a year for Les and that will be it.
NOTES
Started during the night. A nice creamy head on top. 64 F. Turned up to 66 F.
Day 3 - Same, neutral smell.
Day 4 - Same.
Day 5 - Same. Can move out of fridge if needed.
Day 6 - Slow and steady. Every 3 seconds.
Day 9 - Almost done. Tossing on bench in a few days to make room for my Mild.
Day 15 - Done. When I dry hopped and changed the blow off hose, I noticed a wonderful
bready/cracker/honey smell which I haven't smelled in years. I may brew this same
recipe or similar with all of that specialty malt I have using just EKG hops I am going
to buy from UCM if they have it. Do not give up, tweek it if needed. I hope this is good
as I have 2 carboys of the same beer. Kegging tomorrow, Sept. 6.

Very dank and bitter. Not as bad as my last one which I stupidly added 4 ozs. of Columbus for dry hopping. This one is much better but I am done using Columbus all around. I may brew this again this winter, but will use up my Cascade hops and go from there. All in all, this seems to be a successful beer so far. My record on these styles is not that good. There always seems to be something off about them. I am curious to see how an all Cascade beer will taste like. I do think it will be good.

Seems to of mellowed out a lot. Still taste the Columbus hops a bit. The Cascade hop aroma is fading now.
