Costco Wine, Friday, June 14, 2019

Another wine put down. May have to heat the room, in June?

                                                                FERMENTATION NOTES

O.G. - 1.092
DAY 10 -.995
F.G. -    .992
% -     13.5

Yes, had to turn on baseboards as it is too cold here in mid June. What a joke. Going good the next morning as the smell is strong. Turned down heat, 74 F, too warm. Baseboards are hard to regulate.

Day 1 - Put everything together.
Day 2 - It is fermenting, I can smell it. 74 F, turned off baseboard heater.
Day 6 - Ants. Yes, ants all crawling on the rim of the pail trying to get in the wine. This is not good
with a lose lid. I hammered on the lid and added an air lock. No more ants, but they are still
around. Didn't see any in the wine though, but that would be hard to do. 76 F at once
point. Too warm. This may be my last wine until I can get a cooler temp to ferment it in.
Either wine or beer? Beer, this can wait.
Day 8 - Finally slowed down. Should be able to rack to my Helles carboy in a day or so. Will
of course check gravity. 72 F.
Day 10 - Check gravity and rack if it is 1.010 or lower.
June 25 - Racked to a carboy. 0.995. Can add the packets of stuff anytime since it is at this gravity.
Kind of busy now, but will find time next week. Very hazy, mud like. It is too hot to make
wine now. I am going to toss the final two bladders of wine in my beer fridge for the fall.
Using the wine pail for my Robobrews for now on and will buy another wine pail in the fall.
I noticed in my notes last winter I fermented in a pail and got a plastic taste. Not sure what the pail was, but it was not this wine pail, so I assume it was not made for fermentation.
Day 35 - Added all of the stuff I was supposed to add. 79F. Kind of warm but we are in the middle of a so called heat wave. To me, this is just a normal summer.
Day 36 - Add the final clearing agent, chitosan and bottle in 10 days or so.

                                                   BOTTLE AROUND JULY 22

I am busy so this has to sit for a few days longer to bottle. Too busy to bottle this. I have scheduled a time slot on August 2.
