Maggie Helles - Wednesday, Dec. 26, 2018

My last brew for the year!!! This year sucked for brewing beer, but has picked up in the last month or so. Just brew lagers and you will be fine. This is the easiest recipe I have ever brewed and hopefully the best tasting. I am putting in a total effort in brewing this now and all of 2019 and beyond. If my Dec. 10 Helles tastes good when I didn't wash the yeast, I just swirled it around after kegging my SS, dumped it in my new Helles wort. The only thing I didn't like was pitching yeast at 62 F. Hope that didn't matter, will find out around New Years Eve.

                                                    NOTES

I will try in the future to use same day kegged yeast instead of washing it. Way easier than saving yeast. No starter to make which saves a ton of money and time. Of course, it has to work and not taste funny dumping wort on yeast. I didn't really dump wort on the yeast, as I swirled it around and added it to a clean carboy on brew day. The starter I made on Dec. 17 seemed to of finished by the time I went to bed. Very odd. Will give it at least 24 hours on the stir plate anyway since I have a week before I brew anyway. Brew every 3 weeks until you can brew in the garage and brew with both systems until you get busy with pool, lawn, etc... It will only take you 3 brew sessions to get most kegs filled.

                                        D-rest on Dec. 30

It started to really slow down, so turned on the wall heater.

                                                  Jan 3
Sampled and it was fine. Very lite tasting and not cloying. Pils malt taste was
evident, but will go away after kegging as I didn't use Pils malt. Just a lager :(

                                              Jan 10 - Kegging Day

Today is brew day. Using this yeast in new wort. 3rd generation. Confident it will work. Middle of doing the living room so time is a factor and I am lazy too.

                                               Jan 21 - Filter Day

It didn't work, maybe a bit. For all of the work, it isn't worth it. It did work a couple of years ago, but not this time. Maybe a #2 filter? It doesn't taste that great either.

                                                 FINAL TASTINGS

Still hazy on Jan 26. I have carb bite, over carbed it a few days ago. Still, not tasting that great hop aroma I have in the Pilsner. I gather I just needed a better hop schedule and more noble hops. I need to use up the GR NB hops as I hate wasting anything. Storey Steamer still uses them and I will see how it goes with that one.
