Needlers Mill - Friday, March 23, 2018 ( Tossed Out )
Brewing a lager using the last of my Spalt hops. I hope this beer doesn't taste like my Pub Ale as it has an odd taste which I don't like. Brewed 2 Blonde Ales and they both tasted the same. Not sure why.
Ingredients
22 lbs. UCM
1 lb. Vienna
1 lb. Munich I
WLP833 German Bock
200g Spalt - 60 min
55 g Spalt - 20 min
30 g Spalt - 10 min
30 g Spalt - 5 min
(Spalt - 2.2% AA)
CA - 53
S04 - 93
CI - 63
PH - 5.35
3.2 ml Lactic Acid in mash only
Water Profile is a German Pilsner
O.G. - 1.048

SRM - 4.5
BU - 29
MAJOR PROBLEMS WITH COOLING DOWN THE WORT. LATER...
Finally pitched the yeast on Sunday @ 7 am. Smelled the wort and I didn't like what I smelled. I don't think it was because of the delay in adding the yeast. It was the same smell that my Pub Ale had using these 2 1/2 year old Spalt hops. The smell was more intense because I used 314 grams of them. I am sick of being ripped off my homebrew stores that sell old hops. I am going to buy some Perle hops for only one batch to see if it is worth it to buy 5 lbs. of them from UCM. Bought 3 ozs. of Perle hops to see if it is worth buying 5 lbs. later on this year.
FERMENTATION NOTES
Finally saw some activity on Sunday night. 29 hours after pitching.
Day 2 - Going good. 52 F.
Day 3 - Same.
Day 4 - Starting to slow down. D-rest today or tonight. Working on
laundry tubs though.
Day 5 - D-rest March 29.
Day 6 - Still active. 72 F. Turned off wall heater to let it cool to around 68 F.
Day 7 - Still active. Longest d-rest yet. It can take 4 - 10 days though. patience...
Day 8 - Slowing down now with the D-rest. Ramp down slowly. Keg only if
good which I doubt will be.
TOSSED OUT
No beer taste, just something questionable. God, I really screwed this up.
