Carboys
This is a simple Blonde Ale which is usually the first brew homebrewers make. I am using the last of my US-05 brick and it will be lagers for the rest of the year hopefully. Blonde Ales: Craft Brewers in Ontario which charge $52.00 a case for. Kiss my ass...

140 g Spalt - 2.2% AA for 60 min.
46.5 g US-05
O.G. - 1.047 * 87% efficiency
F.G. - 1.010
% - 4.86
SRM - 4
BU - 17.8
Water Profile is Yellow Full from Bru'n Water.
CA - 51
S04 - 56
CI - 69
PH - 5.33
4 ml Lactic Acid
Brew day went fine, eneventful. Need to watch when I am heating my mash tun and sparge tank to not over shoot the temp. Other than that, all is good so far. Wort tasted good. Spalt hops gave more aroma than bitterness which is what I knew would be the case, considering they are 2.2% AA. Wort was darker that 3.3 SRM. Not sure why. It doesn't matter but I would like to know why with just 2 row it should be way lighter. Maybe the UCM which is in a different and in the old bag which I used to get many years ago.
FERMENTATION NOTES
Next Day - Full krausen next am. 66 F. Wall heater on, was 62 F.
Day 2 - Still very active. Maybe turn on wall heater - 66 F, 68 F yesterday.
Day 3 - Less active but still going good. Temp was 68 F on carboy 1. Carboy 2 -
72 F. Temp strip was quite old, so I read the newer one. Wall heater off
and door open. May brew one more on bench, but with mild temps
outside I may be limited on using carboys.
Day 5 - Pretty well done. Not much going on. Should be able to keg this on
March 7. Removed blow off hose and installed an air lock. I smelled
it before installing the air lock and it smelled fantastic. A nice noble
hop aroma which is exactly what I am after.
TASTE AFTER KEGGING
Stale. This is what I get now, and what I got in the last time I brewed this which was in 2013. Same everything. Not sure what the funny taste is. Stale, oxygenated? The sample was the same, so I didn't splash it around. hmmm, not good. Better not show up in my lagers later on this spring.
FINAL UPDATE
Tasting good now. It took 2 weeks for that funny off flavour to 90% go away. Something to remember if I ever make a blonde ale again. Most likely not, but you never know. Next winter when I am looking at empty carboys I might toss one together. It was the Spalt hops. This is the first one and the second one I didn't even keg, just tossed it in the sump hole. The hops were from 2015. That is just bull shit. You mean these just sit around for 2 1/2 years going stale? Seems that way. I bought some Saaz from Defalco's in Ottawa, so I may continue to buy their hops instead of OBK. Nope, they sucked too. Hallertauer or don't brew this style.
