I am out of honey malt and the crystal 15 smells funny, so recipe has changed. I will not be brewing this style of beer until later on in the summer. Lagers in March, April and May. June is pool work, so outside stuff takes over. Should have enough beer anyway. If not, sneak one in, an ale though. I don't have enough US-05 for another batch. I may meaure it again without the vacuum packaging. No gravity reading or tasteing of wort today. Cleaning everything.
No mistakes today either. I write just about everything down.
INGREDIENTS
22 lbs. UCM 2 row
2 lbs. Munich ( out of honey malt )
2 ozs. choc malt ( 400 L )
1 lb. corn sugar
28.35 g Chinook at 60 min.
14 g Chinook at 30 min.
14 g Chinook at 20 min.
14 g Chinook at 10 min.
113 g Chinook at 0 min.
50 g US-05
Water Profile - Same and not changing it.

PH - 5.35 ( estimated )
No acid required
O.G. - 1.052

SRM - 6 * WORT SRM WAS PERFECT *

FERMENTATION NOTES
Pitched yeast @ 11:30 am. It will be way sooner when I wire the sparge to 240v.
Next Day - Both going good. 66 F.
Day 4 - Slowed down a lot. 64 F.
TASTING NOTES
This is the only one that tastes okay. Not that great, but drinkable. I am retiring this style. I will never make it again. Sick of that citrus taste. I will buy it if I ever have a craving for this style of beer. Lagers for now on and perhaps Steam Beer which I like but need to brew it more.
