Cujo Pub Ale - Friday, March 24, 2017 - Dedicated to Thucky

CUJO 2000 - 2017

 15 gallons

This beer is dedicated to my 3rd dog Cujo who passed way on Feb. 27, 2017. He was 16 1/2 years old. He had diabetes, a heart murmur, half deaf and blind. Still, he fought it until the very end when we had no choice but to say goodbye. A real fighter he was.

This is the second brew using my new water profile using Bru'n water. I really should wait until this is kegged to see if it actually works or not. I am confident that it will. Pretty much the same recipe as the first one and most likely the same recipe for all of 2017. Very cheap beer to make compared to what Ontario Craft Brewers charge for their basic Blonde Ales. This will have the same water profile as the last beer. The previous beer had a low BU of around 20. This will be 25 and if that isn't enough, I can go to 30 if needed for my last brew before the bulk grain buy in May.

22 lbs. Bohemian Pils Malt
1.16 lbs. TFW
14 g Magnum - 11.8% AA @ 60 min.
45 g Hallertauer - 4.3 % AA @ 60 min.
30 g Hallertauer - 2.5% AA @ 60 min.
Made a mistake and mixed up the AA in the Hallertauer, so all in @ 60 it is.
Nottingham ( 3 sachets - 2 are older but still in date ) Pitched @ 12 noon @ 62 F.
I didn't want to get it that low, but it is what it is.

O.G. - 1.054 - 92%
F.G. -  1.010
% -      5.8
SRM - 3
BU - 25

Wort was more cloudy than the last brew coming from the mash tun. The first 8 L coming from the boiler to the conical was cloudy, but the rest was very clear. The colour was darker because I boiled for 90 min. Added gelatin on Saturday, April 8. This will take at least a week to clear and maybe longer. At least it is clearing to an acceptable level where I can bottle without leaving sediment on the bottom of the bottles weeks later when I open one. I haven't taken a gravity reading, too much yeast in sample. Besides, I was short. I assume it was around 10 as it tastes just like the last one. This definitely needs something. Bland like the last one, but it should be as the recipe was the same. The next beer had specialty malts and way more hops. If that doesn't give me some flavour, I will either do more research and change the water profile to get a more agressive taste in my beer. However, this beer and the last one were still drinkable and I didn't toss it out. Now that is something compared to that shit I brewed a couple of months ago and at Xmas too.

                                                     FINAL NOTES

Too bad I am down to my last keg because this has turned out to be a real good beer. The best blonde ale ever. I hope my bitters and pilsners taste this good. This still needs aroma hops. All in all, a real nice beer. The malt finally come through after 3 weeks. So this means I should bottle condition half of my beers to age them in the basement.
