Ferment @ 63 F - 64 F
I am just about out of hops, had to change the amounts to accommodate the schedule for next weeks Helles. I am still at 23 bu so all is good. A good krausen the next morning. Almost done on Thursday, July 7. Kegged on July 25th. It wouldn't stop fermenting so I just waited it out. FG only got down to 14. Low BU though.
O.G. - 1.050
F.G. - 1.014
% - 4.75
SRM - 3
BU - 23
Kegged this on July 25. Tastes a bit funny though. Boxer Lager? I have 2 weeks before I have to serve this to guests, so it had better improve.
*UPDATE*
It does have a funny taste. It needs aging, but I can't age it as it will be served on Aug 5th. Very clear and a real clean taste. In 3 weeks from now it should be back to where it usually tastes if any is left. More on this later as I want to go to a regular yeast which will be brewed in carboys on my brew bench during the winter where I really can't control the fermentation temp. Here are 3 yeasts which I have on hand right now. 060. 080. and 1007. Which ever beer tastes best will be my go to yeast for the winter. 833 will be in the conical which I want to go ahead and make Pilsners. Funny taste is starting to go away now. I still like Pilsners better and brew more of them. However, I need to use my 4 carboys during the winter and brew them on the beer bench.
