I am finally getting around to brewing styles of beer that I have been reading about for 30 freaking years, but was always too chicken to brew. This will be my third lager this year. My first one was okay, but I got sulphur from pitching too high ( 60 F ). My second was pitched @ 46 F and it turned out okay. This one can't hide behind a big malt bill like my Maggie Marzen. Just pitch the big starter of yeast @ 44 F - 46 F and you will be fine. ( I pitched @ 46 F )
20 lbs. Bohemian Pils Malt - ( 93% )
1.50 lbs. Munich Malt Type 1 ( 6 L ) - ( 7% )
86.50 grams Hallertauer @ 60 min. ( 4% AA )
WLP833 German Bock
75/25 RO/CITY - 1.50 qts./lb/ - 8 gallons in mash and 12 gallons in sparge.
O.G. - 1.045
F.G. - 1.014
% - 4
SRM - 3.4
BU -18
It took 70 hours to get going, too long IMO. It is now done on day 12. No activity in the air lock. I give it a D-rest on day 11, but it wasn't doing much. I will let it sit for a few more days and then keg it. Lower the temp 2F a day until it hits 34 F. Lager and enjoy at Christmas.
This was a very good beer.
