Brew Day - Wednesday, July 30, 2014 - Knuckle Head Ale
This is what I brewed back in 2011 and it turned out to be a very good beer. Here goes nothing.....
19 lbs. Weyermann Pils Malt
1 lb. Munich Malt Type 1
1 lb. Carafoam
1 lb. Carahell Malt
62 g Hallertauer Tradition ( 7 AA ) - 60 min.
Wyeast 1098 British Ale
70/30 RO/WELL
QTS/LB. - 1.60 - 10 G in mash and sparge
O.G. - 1.046 - 84%
F.G. - 1.010
% - 4.7
SRM -5.7
BU - 25
FTBS and the LCBO
This brew is for our guests from Burlington who are coming here in late August. Finished in 5 days. Has a slight cloying taste, but it is still very early. I turned down the mill to it's original position. Grains were cracked, but just. Sampled on Fri Aug 9. Cloying taste has gone and been replaced with a nice beer. Good hop BU along with a sweet malt flavor which is a cross between Munich and Pils malt. This is what I have been wanting in my beers but just didn't get there. I guess I will stick with 1098 as it is a good neutral and attenuating yeast. I can also use it in my bitters.Transferred to kegs on Wed Aug 20. No cloying taste detected the next day. Still has a good hop aroma, BU is lower. This is my House Ale now. I need to brew a beer that I won't change every time I brew it. This may be it. One keg blown but the other one is untouched. This is starting to mellow out and is now a nice beer. Still, I am not going to use Hallertauer Tradition hops again. They have a kind of harsh, bitter taste to me. I noticed this the first time I used them. I am thinking on buying 5 lbs. of Saaz since I can get it here at UCM.
